
The days are getting warmer and grills are firing up in neighborhoods everywhere. Summer is the best time to grill out, the only problem is we tend to load up the grill with fatty meats like brats, burgers and hotdogs. Keep your cookout healthy with lean meats, plenty of vegetables, and fruit. Here is a recipe for delicious chicken and vegetable skewers that are sure to be a hit at your next cook-out.
Ingredients
- 8 boneless, skinless chicken breasts
- 2 lemons
- 1/4 cup olive oil
- 2 tablespoons dijon mustard
- 2 cloves minced garlic
- Kosher Salt
- Pepper
- 2 red bell peppers
- 2 green peppers
- 1 red onion
- 2 zucchini
- Skewers
Instructions
- Season chicken breasts with salt and pepper on both sides
- In a small bowl, combine juice from 2 lemons, mustard, garlic and olive oil
- Place chicken breasts in a zip-lock bag and add marinade
- Seal the bag and store in the refrigerator for at least 2 hours
- Chop vegetables in 1-inch slices
- Cut chicken breasts into 1-inch cubes
- Slide chicken and vegetables onto skewers, alternating chicken and vegetables
- Grill until the chicken is cooked through

The great thing about this recipe is that it’s so versatile. You can switch up the vegetables depending on what’s in season or what you have on hand. You can also change out the protein by substituting lean cuts of beef, pork or shrimp. Grilled skewers are easy to make and guaranteed to please everyone at the cookout.
